The Shahji Story

One Method.
Unchanged Since 1957.

Late Shri Arjun Das Ahuja started Shahji Ghee in Meerut in 1957 with one principle - pure milk, honest measure, the bilona method his mother taught him. His grandson Puneet runs the same dairy today. The recipe has not changed. The commitment has not changed.

Open the jar. The granular texture you see is not a defect. It is the physical signature of hand-churning that no industrial process can replicate. The smell that rises when you open the lid is not added. It develops during the slow, low-heat clarification of hand-churned butter.

Why Sahiwal Cow - Specifically

India's Rarest Indigenous Dairy Cow.

The Sahiwal is considered the highest milk-fat cow among all Indian indigenous breeds - and it is disappearing. Fewer than 50,000 pure Sahiwal cattle remain in India today. We source from a carefully maintained herd in Meerut. The smaller herd means smaller ghee batches. That rarity is reflected in the richness of every jar.

Highest milk-fat of all Indian cow breeds: richer base milk produces a noticeably creamier, deeper ghee

Fewer than 50,000 pure Sahiwal remain in India: your purchase directly supports preservation of this breed

Native to Punjab and UP: perfectly adapted to our Meerut climate, producing milk year-round without stress

Pure A2 beta-casein genetics: DNA-verified breed, not crossbred. 100% Sahiwal lineage maintained.
