Shahji A2 Gir Cow Bilona Ghee is made from the milk of grass-fed Gir cows using the traditional 3-day bilona method — the same method Late Shri Arjun Das Ahuja used in Meerut in 1957. It is not the fastest way. It is not the cheapest way. It is the right way.

Open the jar. The first thing you notice is the texture - granular, not smooth. That granularity is the physical signature of authentic bilona churning. Commercial ghee is filtered at high temperature to remove these granules and create a smooth appearance. We do not filter them out, because they are proof of the process.

The second thing you notice is the smell - warm, nutty, slightly caramelised. Real bilona ghee has a depth of aroma that commercial ghee cannot replicate, because the aroma develops during the slow, low-heat clarification of hand-churned butter.
